The Perfect Late Summer Sandwich

My Mother has been eating these for so long that I remember turning my nose up at them in favour of Kraft Dinner.  I`m not entirely sure what I was thinking as a teenager at the best of times – in this case I don`t have the foggiest.

I assure you that this is the most wonderful taste of fall I know.

Sandwich base (assemble from of list to bottom):
Fresh pumpernickel bread
Feta cheese
Cucumbers
Thick tomato slices (heirlooms optional)
Salt, Pepper

Dressing (a standard oil and vinegar will do, here`s a sample):
3-Parts Oil
1-Part Balsamic
Minced Garlic (I use a rasp to pulp it)
All the fresh herbs you have – chives, basil, oregano, parsley are all great in abundance
Honey (if you want)
Dijon (if you want)
I add salt, pepper, chili flakes.

Drizzle dressing on sandwich and wait for it to seep through to the bread.  Give the flavors time to introduce themselves.  Eat with knife and fork.

I know of nothing better than this awesome taste in the summer.  What are your harvest favourites?

this looks amazing. my favorite salad of the summer season, one that i can never get enough of, and is very similar to your mom’s sandwich is:

the biggest plate i own filled with slices of heirloom tomatoes, a slice of feta right on top of each slice of tomato. drizzled with copious amounts of good greek olive oil, sprinkled generously with turkish or aleppo pepper, and sometimes or sometimes not some crushed dried oregano leaves. i find the oregano only really adds to the whole thing if is what i have dried myself from my herb garden. the store bought dried oregano doesn’t quite cut it. YUM! :)

oh WAIT! i can’t forget the ending! toasted ciabatta, or baguette MUST be used at the end to soak up every last drop of that tomato, chile infused oil. the bread should be sliced about 3/4 inch, so it get’s toasty on the outside and the soft inside soaks up all of the good stuff!

Joel made this for me while I was visiting last week, and I can honestly say I haven’t had such a flavorful meal in ages. Looks simple, but it was sweet, sour, savoury, bitter and aromatic all in one bite. Magnifique! I was craving it again all week…
