This is a butcher shop in Brooklyn called Marlow & Daughters, Tom Mylan the butcher expresses it nicely – it’s important to have a personal relationship your butcher because ‘words don’t always mean what they should’. There’s a proliferation of “Organic” “Free Range” etc. labeling out there…but what does it really mean? The best way to find out is talk to people, farmers, butchers…ask, and form a relationship with someone you can trust. It’s a big investment in time, but well worth it in our estimation. For health, sustainablility and education, and for fun! Learn about and respect your food.
